Chunky Monkey Banana Cookies
Ingredients
- 1/2 cup (120g) ripe banana, mashed
- 1/3 cup (55g) coconut sugar
- 1/4 cup (65g) almond butter
- 1 tsp vanilla extract
- 3/4 cup (90g) paleo flour
- 1/2 tsp cinnamon
- 1 tsp baking powder
- Pinch of salt
- 1/4 cup (30g) chopped walnuts
- 1/4 cup (45g) chocolate chips
Preparation
Preheat the oven to 350ºF.
Stir together the banana, coconut sugar, almond butter, and vanilla.
Add the dry ingredients and mix to combine.
Fold in the walnuts and chocolate chips.
Scoop or roll onto a lined baking sheet.
Press lightly to flatten.
Bake for 10-12 minutes at 350ºF.
Cool for about 10 minutes, then eat.
