Vegan Gluten-Free Blondies with Chocolate Chips

Ingredients

  • 1/2 cup almond butter
  • 1/4 cup nondairy milk
  • 2/3 cup coconut sugar
  • 2 flax eggs
  • 1 tsp vanilla extract
  • 1 cup oat flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/3 cup chopped walnuts
  • 1/3 cup chocolate chips

Preparation

  1. Preheat the oven to 350ºF.

  2. Prepare the flax eggs and set aside to gel.

  3. Whisk together the almond butter, coconut sugar, flax egg, almond milk, and vanilla.

  4. Add the oat flour, baking powder, cinnamon, and salt. Stir to combine.

  5. Fold in the chocolate chips and walnuts.

  6. Spread batter into a greased loaf pan, smoothing the top and maybe adding a few extra chocolate chips.

  7. Bake for 20-25 minutes at 350ºF until edges are lightly browned.

  8. Cool, then slice and eat.
