Quarantine Banana Bread

Ingredients

  • 1/2 cup coconut sugar
  • 1/2 cup peanut butter
  • 1 cup non-dairy milk
  • 2 cups oat flour
  • 1 1/2 cups almond flour
  • 1 tbsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • maple pb glaze
  • 1/4 cup peanut butter
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract

Preparation

  1. Mash/blend the bananas

  2. Whisk together mashed banana, prepared flax eggs, coconut sugar, peanut butter, and nondairy milk

  3. Add dry ingredients and mix until clump free

  4. Pour into a well greased bundt pan (mine was 10 cup

  5. Bake for 40-45 minutes at 350ºF

  6. Cool for 10 minutes, then flip onto a cooling rack to cool completely

  7. Whisk together the glaze ingredients until smooth

  8. If it’s too thick, microwave for 5-10 seconds

  9. Spoon glaze onto cooled cake, and sprinkle with chopped roasted peanuts
