Quarantine Banana Bread
Ingredients
- 1/2 cup coconut sugar
- 1/2 cup peanut butter
- 1 cup non-dairy milk
- 2 cups oat flour
- 1 1/2 cups almond flour
- 1 tbsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- maple pb glaze
- 1/4 cup peanut butter
- 1/4 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
Preparation
Mash/blend the bananas
Whisk together mashed banana, prepared flax eggs, coconut sugar, peanut butter, and nondairy milk
Add dry ingredients and mix until clump free
Pour into a well greased bundt pan (mine was 10 cup
Bake for 40-45 minutes at 350ºF
Cool for 10 minutes, then flip onto a cooling rack to cool completely
Whisk together the glaze ingredients until smooth
If it’s too thick, microwave for 5-10 seconds
Spoon glaze onto cooled cake, and sprinkle with chopped roasted peanuts
