Chickpea Almond Butter and Tahini Blondies

Ingredients

  • 2 cans chickpeas (drained and rinsed)
  • 1/2 cup date syrup (adjust to taste)
  • 1/3 cup almond butter
  • 1/3 cup tahini
  • 2 tsp vanilla extract
  • 1/2 cup almond flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 to 1 cup non-dairy chocolate chips
  • 1/2 cup walnuts (optional)

Preparation

  1. Combine all ingredients except chocolate chips in a food processor or blender until smooth and stop to scrape sides as needed

  2. Once smooth, add chocolate chips and walnuts and stir

  3. Place the mixture in a parchment-lined or greased 8x8 pan and bake at 350°F for 30 minutes, then perform the toothpick test to check doneness
