Chickpea Almond Butter and Tahini Blondies
Ingredients
- 2 cans chickpeas (drained and rinsed)
- 1/2 cup date syrup (adjust to taste)
- 1/3 cup almond butter
- 1/3 cup tahini
- 2 tsp vanilla extract
- 1/2 cup almond flour
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 to 1 cup non-dairy chocolate chips
- 1/2 cup walnuts (optional)
Preparation
Combine all ingredients except chocolate chips in a food processor or blender until smooth and stop to scrape sides as needed
Once smooth, add chocolate chips and walnuts and stir
Place the mixture in a parchment-lined or greased 8x8 pan and bake at 350°F for 30 minutes, then perform the toothpick test to check doneness
