Oatmeal Chocolate Chip Walnut Cookies
Ingredients
- 1/2 C @miyokoscreamery vegan butter, slightly softened (any butter or coconut oil will do)
- 1/2 C @swervesweetie brown sugar sweetener (can sub regular sugar or coconut sugar)
- 2 tbsp @addjoi cashew or almond milk (any plant based milk)
- 2 tsp @simplyorganicfoods Madagascar vanilla
- 1/2 tsp almond extract (optional)
- 1/2 tsp salt
- 1 1/4 C @arrowheadmills oat flour
- 3/4 C @bobsredmill GF rolled oats
- 2 tsp @bobsredmill arrowroot powder (can also use tapioca flour or cornstarch)
- 1/2 tsp baking soda
- 1/2 C walnuts, chopped
- 1/2 C @lilys_sweets keto vegan dark chocolate chips, plus more for topping
Preparation
Preheat oven to 350.
Add all wet ingredients to a mixing bowl and beat on high using a hand mixer until light and fluffy, about 2 minutes.
Add in all dry ingredients except chocolate and walnuts and mix just until combined.
Fold in walnuts and chocolate chips.
Chill dough for 30 minutes.
Form cookies using about 1.5 tablespoons of dough each, place on a parchment-lined baking sheet, top with extra chocolate chips, and bake for 8-10 minutes.
Eat warm with a glass of ice cold milk.
