Chocolate Chip Cookies

Ingredients

  • 140g brown sugar / coconut sugar
  • 60g coconut oil
  • 90g rice flour
  • 100g dark chocolate
  • 1 tsp cornstarch
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 1 egg plum
  • 30g pecan nuts

Preparation

  1. Add sugar & oil/butter to a bowl and mix using a kitchen machine for 3mins

  2. Add vanilla + egg plum then mix for a few minutes more

  3. Blend in all dry ingredients, stir, shape dough into balls then layer on a baking tray

  4. Bake for 10-13 minutes on 180C
