Irresistible Chocolate Chip Cookies with Tahini
Ingredients
- 1 cup tahini
- 3/4 cup coconut sugar
- 1/4 cup maple syrup
- 2 tsps vanilla extract
- 1 egg
- 2 cups wholemeal or spelt flour
- 1/4 tsp bicarb
- 1/4 tsp baking powder
- 200g chopped dark chocolate
Preparation
Preheat oven to 180C and line a baking tray with parchment paper.
Add the sugar to a high speed blender and blend until a fine powder consistency.
Add the tahini, sugar, syrup, vanilla and egg to the bowl of an electric mixer and mix well.
Sift the flour, bicarb and baking powder into the bowl and combine well. Fold in the choc chips.
Place in the fridge to chill for 30 minutes.
Roll tablespoons of the cookie dough into balls and place on the lined baking tray. Flatten slightly.
Bake for 15 minutes and allow cookies to cool.
