Delicious Pink Pancakes with Strawberries and Pitaya

Ingredients

Wet

  • 1 tbsp acv
  • 1 1/4 cup coconut unsweetened milk
  • 2 tbsp maple syrup

Dry

  • 2 cups oat flour
  • 1 1/2 tsp baking powder
  • 3 tbsp pink pitaya powder
  • pinch of salt

Toppings

  • sliced strawberries
  • vegan butter
  • maple syrup

Preparation

  1. Combine acv with milk in a small bowl.

  2. Combine dry ingredients in large bowl.

  3. Make a well in the middle of the dry ingredients and add all the wet ingredients and mix well.

  4. Scoop out 1/3 cup of batter and place onto a low medium heat non stick pan coated with vegan butter.

  5. Flip once the edges have risen and cook till golden pink/brown.

  6. Place a pancake then add sliced strawberries on each layer. Drizzle maple syrup on the top!
