Delicious Pink Pancakes with Strawberries and Pitaya
Ingredients
Wet
- 1 tbsp acv
- 1 1/4 cup coconut unsweetened milk
- 2 tbsp maple syrup
Dry
- 2 cups oat flour
- 1 1/2 tsp baking powder
- 3 tbsp pink pitaya powder
- pinch of salt
Toppings
- sliced strawberries
- vegan butter
- maple syrup
Preparation
Combine acv with milk in a small bowl.
Combine dry ingredients in large bowl.
Make a well in the middle of the dry ingredients and add all the wet ingredients and mix well.
Scoop out 1/3 cup of batter and place onto a low medium heat non stick pan coated with vegan butter.
Flip once the edges have risen and cook till golden pink/brown.
Place a pancake then add sliced strawberries on each layer. Drizzle maple syrup on the top!
