Stack of Pancakes
Ingredients
- 1 cup all purpose flour
- 2 tbsp maple syrup
- 1 tbsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1 cup soy or almond milk
- 1 flax egg (1 tbsp flax-meal 3 tbsp water)
- 1 tbsp apple cider vinegar
- vegan butter (for frying pan)
Preparation
Create buttermilk mixture by combining plant based milk and apple cider vinegar together in a bowl
Make your flax egg by mixing 1 tbsp flax meal with 3 tbsp water and allow to sit for a few minutes
Add flour into a mixing bowl along with baking powder, baking soda and salt
Add non-dairy milk, maple syrup and flax egg to the mixing bowl and whisk until batter is formed and there are no lumps
Heat a pan on medium heat with a tsp vegan butter
Pour in about a 1/4 cup of batter for each pancake
Flip your pancake as soon as you see small bubbles on the surface of the pancake and dry edges
About 2-3 minutes on each side
Serve with syrup of your choice, fresh fruit and nut butter!
