Stack of Pancakes


  • 1 cup all purpose flour
  • 2 tbsp maple syrup
  • 1 tbsp baking powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 cup soy or almond milk
  • 1 flax egg (1 tbsp flax-meal 3 tbsp water)
  • 1 tbsp apple cider vinegar
  • vegan butter (for frying pan)


  1. Create buttermilk mixture by combining plant based milk and apple cider vinegar together in a bowl

  2. Make your flax egg by mixing 1 tbsp flax meal with 3 tbsp water and allow to sit for a few minutes

  3. Add flour into a mixing bowl along with baking powder, baking soda and salt

  4. Add non-dairy milk, maple syrup and flax egg to the mixing bowl and whisk until batter is formed and there are no lumps

  5. Heat a pan on medium heat with a tsp vegan butter

  6. Pour in about a 1/4 cup of batter for each pancake

  7. Flip your pancake as soon as you see small bubbles on the surface of the pancake and dry edges

  8. About 2-3 minutes on each side

  9. Serve with syrup of your choice, fresh fruit and nut butter!
