Berry Haze Protein Pancakes with Caramelized Banana

Ingredients

  • 100g plain flour (oat flour used)
  • 1 tsp baking powder
  • 1 scoop of Berry Haze protein powder
  • 240ml plant milk (unsweetened soya used)
  • Pinch of salt
  • Mixed berries
  • 1 banana
  • Cinnamon
  • Maple syrup

Preparation

Prepare the pancake batter

  1. In a large bowl, combine the flour, protein powder, baking powder, salt, and plant milk. Mix until a thick batter forms.

Cook the pancakes

  1. Heat a large non-stick frying pan over medium heat with a dash of oil.

  2. Spoon the batter onto the pan and top each pancake with a few berries.

  3. Cook for 2-3 minutes, then flip and cook for another 1-2 minutes.

Caramelize the banana

  1. Peel the banana and slice it in half lengthways.

  2. Carefully add the banana to a frying pan with a little oil over high heat.

  3. Drizzle maple syrup and sprinkle cinnamon over the banana.

  4. Flip the banana and cook the other side for 1-2 minutes until caramelized.

Assemble and serve

  1. Stack the cooked pancakes.

  2. Place the caramelized banana on top.

  3. Serve with fresh berries and top with dairy-free yogurt and cinnamon.
