Berry Haze Protein Pancakes with Caramelized Banana
Ingredients
- 100g plain flour (oat flour used)
- 1 tsp baking powder
- 1 scoop of Berry Haze protein powder
- 240ml plant milk (unsweetened soya used)
- Pinch of salt
- Mixed berries
- 1 banana
- Cinnamon
- Maple syrup
Preparation
In a large bowl, combine the flour, protein powder, baking powder, salt, and plant milk. Mix until a thick batter forms.
Heat a large non-stick frying pan over medium heat with a dash of oil.
Spoon the batter onto the pan and top each pancake with a few berries.
Cook for 2-3 minutes, then flip and cook for another 1-2 minutes.
Peel the banana and slice it in half lengthways.
Carefully add the banana to a frying pan with a little oil over high heat.
Drizzle maple syrup and sprinkle cinnamon over the banana.
Flip the banana and cook the other side for 1-2 minutes until caramelized.
Stack the cooked pancakes.
Place the caramelized banana on top.
Serve with fresh berries and top with dairy-free yogurt and cinnamon.
