Gooey Chocolate Protein Pancakes

Ingredients

  • 3/4 cup oat flour or all-purpose flour (90g)
  • 2 tsp baking powder
  • 2 tbsp cacao powder
  • 2 tbsp chocolate PBfit
  • 2-3 tbsp sugar (I used coconut sugar)
  • 1 cup dairy-free milk
  • 2 tbsp coconut oil
  • dash of vanilla
  • pinch of salt
  • 1/2 cup chocolate chips

Preparation

  1. Add all of the pancake ingredients to a large bowl and mix well.

  2. Grease the pan with coconut oil and add about 1/4 cup of batter to the pan for each pancake. You will get about 5-6 pancakes with this recipe.

  3. Cook each pancake for 2-4 minutes on each side.

  4. Melt some dark chocolate and pour over the pancakes. Optional: add fruit of choice; I like to add banana coins.
