Cobbler

  • 1 cup oat flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 1/3 cup coconut oil
  • 2/3 cup dairy-free milk

Peach Filling

  • 6-8 peaches
  • 1/4 cup sugar
  • 1/2 lemon (both juice and zest)
  • 1 tsp vanilla

Preparation

  1. Create oat flour by grinding oats in a blender or food processor.

  2. In a large bowl, combine oat flour, sugar, baking powder, salt, and cinnamon.

  3. Add coconut oil and dairy-free milk to the dry ingredients. Mix well.

  4. Grease a baking pan with coconut oil and spread the batter evenly in the bottom.

  5. Peel and slice the peaches.

  6. In a large bowl, mix sliced peaches with sugar, lemon juice, lemon zest, and vanilla.

  7. Spread the peach mixture over the batter in the baking pan.

  8. Bake at 350°F (175°C) for 40-45 minutes, until the batter rises and creates a golden crust.

  9. Once cooled, serve the cobbler with vanilla ice cream.
