Vegan Peach Cobbler with Misfits Market Ingredients

- 1 cup oat flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/4 tsp salt
- 1/4 tsp cinnamon
- 1/3 cup coconut oil
- 2/3 cup dairy-free milk
Peach Filling
- 6-8 peaches
- 1/4 cup sugar
- 1/2 lemon (both juice and zest)
- 1 tsp vanilla
Preparation
Create oat flour by grinding oats in a blender or food processor.
In a large bowl, combine oat flour, sugar, baking powder, salt, and cinnamon.
Add coconut oil and dairy-free milk to the dry ingredients. Mix well.
Grease a baking pan with coconut oil and spread the batter evenly in the bottom.
Peel and slice the peaches.
In a large bowl, mix sliced peaches with sugar, lemon juice, lemon zest, and vanilla.
Spread the peach mixture over the batter in the baking pan.
Bake at 350°F (175°C) for 40-45 minutes, until the batter rises and creates a golden crust.
Once cooled, serve the cobbler with vanilla ice cream.
