Vegan Cinnamon Rolls with @Naturesfynd
Ingredients
Dough
- 1/3 cup coconut oil
- 1 1/2 cups dairy-free milk
- 1/3 cup coconut sugar
- 1 packet yeast
- 3 1/3 cups all-purpose flour
- Dash of salt
Filling
- 1/3 cup coconut oil (softened, not melted)
- 1/2 cup coconut sugar
- 1 tbsp cinnamon
Frosting
- 1 cup @naturesfynd cream cheese
- 1/4 cup powdered sugar
- 1 tsp vanilla
Preparation
Combine the coconut oil and dairy-free milk in a bowl and microwave for 1 minute. Check the temperature; it should be around 105-110°F.
To the oil and milk mixture, add the coconut sugar. Sprinkle the yeast on top and cover the bowl for 5-10 minutes.
Once the yeast is activated, add the all-purpose flour and mix. Cover the bowl and let it rest in a warm place for 45 minutes to 1 hour.
Sprinkle a clean surface with flour and use a rolling pin to roll out the dough, adding more flour if needed.
Spread softened coconut oil on the dough, then sprinkle with coconut sugar and cinnamon.
Roll the dough tightly and cut off the ends. Divide it into 9 evenly sized pieces.
Line a baking pan with parchment paper and place the rolls in it. Cover them and let them rise in a warm place for 20-30 minutes.
Preheat the oven to 350°F and bake the rolls for 20-25 minutes.
To make the frosting, whisk together @naturesfynd cream cheese, powdered sugar, and vanilla.
Once the rolls have cooled, spread the frosting on top.
