Vegan Gluten-Free Banana Bread with Chocolate

Ingredients

  • 5 ripe medium sized bananas
  • 3 tbsp melted coconut oil
  • 100 ml soy milk or other vegan milk
  • 1 tbsp apple cider vinegar
  • 1 tsp vanilla
  • 600 ml gluten free oat flour
  • 4 tbsp chia seeds
  • 2 tsp baking powder
  • 1.5 tsp bicarbonate
  • 0.5 tsp salt
  • 100 ml chopped walnuts
  • 4 tbsp dark chocolate chips or chopped dark chocolate

Cake tin

  • 1 tsp coconut oil for the cake tin
  • 2 tbsp oat flour for the cake tin

Preparation

  1. Preheat oven to 180 C/350 F.

  2. Mix all the dry ingredients in a bowl.

  3. Mash the bananas in a separate bowl. Add the coconut oil and the other wet ingredients and mix with a spatula. Add the dry ingredients and stir, make sure there are no flour lumps.

  4. Oil the cake tin and sprinkle with a little oat flour to prevent the cake from sticking. Pour in the batter and bake in the middle of the oven for ca 50 mins until golden brown and a tooth pick comes out dry.
