Easy Vegan Almond Flour Biscotti

Ingredients

  • 2 cups almond flour
  • 1/4 cup sugar
  • 3 tablespoons cornstarch
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 4 tablespoons cold water

Optional toppings

  • 1/2 dark chocolate bar
  • 1 tablespoon coconut oil
  • crushed almonds

Preparation

  1. Whisk together the almond flour, sugar, cornstarch, baking powder, vanilla extract, and salt.

  2. Add the cold water and mix to form a dough.

  3. Shape the dough into a log about 10 inches long and 3 inches wide.

  4. Bake at 350°F for 20 minutes.

  5. Allow to cool completely.

  6. Cut into slices, place on side, and bake again for 20 minutes, flipping halfway through.

Finishing

  1. Melt 1/2 a dark chocolate bar with 1 tablespoon coconut oil in the microwave.

  2. Dip the ends of the biscotti into the melted chocolate.

  3. Sprinkle with crushed almonds.
