Vegan Pink Glazed Donuts
Ingredients
- 2/3 cup oat flour
- 2/3 cup all-purpose flour (use gf baking flour if needed)
- 1/3 cup sugar
- 1 1/2 tsp baking powder
- dash of salt
- 3 tbsp applesauce
- 3 tbsp melted coconut oil
- 1 tsp vanilla
- 3/4 cup dairy-free milk
Frosting
- 1 cup powdered sugar
- 1/4 cup vegan cream cheese
- 2 tbsp coconut oil
- 1 tbsp ground up freeze dried strawberries
- 1 tsp vanilla
- 1 tsp dairy-free milk (optional)
- sprinkles
Preparation
In a bowl, combine all of the donut ingredients and mix them well.
Transfer the donut batter to a large piping bag and snip off the end.
Grease a donut pan with coconut oil and pipe the donut batter into each donut mold, filling 3/4 full for smaller donuts or completely for larger ones.
Bake at 350°F for 14-16 minutes until the edges become golden in color.
Allow the donuts to cool completely, then remove from the molds and place on a cooling rack.
While the donuts are cooling, mix together the frosting ingredients in a bowl.
Once the donuts are cool to the touch, dip each into the frosting to coat fully or spread with a butter knife.
Top with sprinkles and refrigerate until the frosting hardens.
Notes
Adjust the dairy-free milk in the frosting for desired consistency if it is too thick or thin.
This recipe makes about 7-10 donuts depending on size and tastes best when enjoyed the day of preparation, but can be stored in an airtight container in the fridge for 4-5 days.
