Berry Baked Oat Bars
Ingredients
- 1 cup oats (80 g)
- 1/2 cup oat flour (ground up oats - 40 g)
- 1/2 cup vanilla protein powder
- 1 cup mashed banana (about 2 large ripe bananas)
- 1/4 cup creamy natural peanut butter
- 2-4 tbsp maple syrup
- 1/3 cup dairy-free milk
- 1 tbsp ground flax seeds
- 1 tsp baking powder
- 2 tsp vanilla extract
- 1/2 tsp salt
- 1 cup mixed berries (+ more to top)
Preparation
Mash up the bananas in a large bowl.
Add the peanut butter, maple syrup, milk, flax, baking powder, vanilla, salt, oats, and oat flour and mix everything well until combined.
Fold in the berries.
Line a baking tray with parchment paper; a 9 x 9 inch baking tray works well.
Pour the oat mixture into the baking tray and add more berries and bananas on top if desired.
Bake the oats for 30-35 minutes at 350°F.
Slice and top with creamy peanut butter before serving.
Tips
Adjust maple syrup amount based on desired sweetness: use 2 tablespoons for less sweet bars and up to 4 tablespoons for sweeter bars.
