Berry Baked Oat Bars

Ingredients

  • 1 cup oats (80 g)
  • 1/2 cup oat flour (ground up oats - 40 g)
  • 1/2 cup vanilla protein powder
  • 1 cup mashed banana (about 2 large ripe bananas)
  • 1/4 cup creamy natural peanut butter
  • 2-4 tbsp maple syrup
  • 1/3 cup dairy-free milk
  • 1 tbsp ground flax seeds
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup mixed berries (+ more to top)

Preparation

  1. Mash up the bananas in a large bowl.

  2. Add the peanut butter, maple syrup, milk, flax, baking powder, vanilla, salt, oats, and oat flour and mix everything well until combined.

  3. Fold in the berries.

  4. Line a baking tray with parchment paper; a 9 x 9 inch baking tray works well.

  5. Pour the oat mixture into the baking tray and add more berries and bananas on top if desired.

  6. Bake the oats for 30-35 minutes at 350°F.

  7. Slice and top with creamy peanut butter before serving.

Tips

  1. Adjust maple syrup amount based on desired sweetness: use 2 tablespoons for less sweet bars and up to 4 tablespoons for sweeter bars.
