Autumn Harvest Pancakes

Ingredients

  • 1 cup flour
  • 2 Tbsp coconut sugar
  • 1 Tbls baking powder
  • 1 tsp pure elderberry powder
  • 1/2 tsp cinnamon
  • 1/4 tsp allspice
  • 1 cup nut milk
  • 1 Tbl apple cider vinegar
  • 1 tsp vanilla
  • 1 apple, thinly sliced

Preparation

  1. In a bowl, combine flour, coconut sugar, baking powder, elderberry powder, cinnamon, and allspice. Set aside.

  2. In a separate bowl, combine nut milk, apple cider vinegar, and vanilla.

  3. Add the wet ingredients to the dry ingredients and mix well.

  4. Let the batter rest without stirring for fluffy pancakes.

  5. Heat vegan butter in a pan over medium heat.

  6. Place the sliced apple in the pan and allow it to soften slightly.

  7. Using a large scoop, pour two scoops of batter over the apple slices.

  8. Cook until bubbles appear and the pancake is no longer wet, then flip.

  9. Cook the other side until golden brown.

  10. Repeat the process with the remaining batter.

  11. Serve the Autumn Harvest Pancakes hot and enjoy!
