Vegan Blueberry Pancakes with Pitaya Sauce

Ingredients

  • 1 cup flour
  • 2 Tbsp coconut sugar
  • 1 Tbsp baking powder
  • 1 cup nut milk
  • 1 Tbsp apple cider vinegar
  • 1 tsp vanilla
  • 1 tsp butterfly pea powder

Blueberry sauce

  • handful of blueberries
  • flesh of half a pink pitaya
  • 1 Tbsp pure maple syrup
  • 1/4 cup water

Preparation

  1. Combine dry ingredients and set aside.

  2. In a separate bowl, combine wet ingredients.

  3. Add wet mixture to dry ingredients and mix.

  4. Combine sauce ingredients and simmer until desired thickness.

  5. Cook the batter to make pancakes.
