Vegan Blueberry Pancakes with Pitaya Sauce
Ingredients
- 1 cup flour
- 2 Tbsp coconut sugar
- 1 Tbsp baking powder
- 1 cup nut milk
- 1 Tbsp apple cider vinegar
- 1 tsp vanilla
- 1 tsp butterfly pea powder
Blueberry sauce
- handful of blueberries
- flesh of half a pink pitaya
- 1 Tbsp pure maple syrup
- 1/4 cup water
Preparation
Combine dry ingredients and set aside.
In a separate bowl, combine wet ingredients.
Add wet mixture to dry ingredients and mix.
Combine sauce ingredients and simmer until desired thickness.
Cook the batter to make pancakes.
