Vegan Pancakes with Fruit Toppings

Ingredients

  • 1 cup flour
  • 2 Tbsp coconut sugar
  • 1 Tbls baking powder
  • 1 cup nut milk
  • 1 Tbl apple cider vinegar
  • 1 tsp vanilla

Toppings

  • caramelized bananas
  • raspberries
  • blueberries
  • cranberries
  • blueberries
  • maple syrup

Preparation

  1. Combine the dry ingredients and set aside.

  2. In a separate bowl, combine the wet ingredients.

  3. Add the wet mixture to the dry ingredients and mix until combined.

  4. Cook the batter on a hot greased griddle or frying pan until bubbles form and edges are set, then flip and cook the other side until golden brown.

  5. Serve with desired toppings.
