Vegan Protein Pancakes

Ingredients

  • 1/4 cup flour (34g)
  • 2 scoops vegan protein powder (30g)
  • 1 tablespoon granulated sweetener of choice (13g)
  • 1 teaspoon apple cider vinegar
  • 1/2 cup non dairy milk of choice (125ml)
  • 1 tsp baking powder (4g)
  • сinnamon, tiny bit of vanilla extract and a pinch of salt

Preparation

  1. Mix the dry ingredients in a bowl

  2. In a measuring cup, add the wet and leave for 2 minutes until the milk has curdled a bit

  3. Mix the two and let stand - you might need to add more liquid, but it should be somewhat thick

  4. Heat a nonstick pan on medium heat and add a few tablespoons of batter

  5. Let cook for until the edges seem firm and there’s a few bubbles - then flip

  6. Serve with syrup and fruit ? or whatever your heart desires!
