Vegan Protein Pancakes
Ingredients
- 1/4 cup flour (34g)
- 2 scoops vegan protein powder (30g)
- 1 tablespoon granulated sweetener of choice (13g)
- 1 teaspoon apple cider vinegar
- 1/2 cup non dairy milk of choice (125ml)
- 1 tsp baking powder (4g)
- сinnamon, tiny bit of vanilla extract and a pinch of salt
Preparation
Mix the dry ingredients in a bowl
In a measuring cup, add the wet and leave for 2 minutes until the milk has curdled a bit
Mix the two and let stand - you might need to add more liquid, but it should be somewhat thick
Heat a nonstick pan on medium heat and add a few tablespoons of batter
Let cook for until the edges seem firm and there’s a few bubbles - then flip
Serve with syrup and fruit ? or whatever your heart desires!
