4-Ingredient Vegan Pancake Cereal

Ingredients

  • 3 cups flour
  • 1.5 teaspoons baking soda
  • 1.5 teaspoons baking powder
  • 3 cups non-dairy milk
  • 2 teaspoons maple syrup or sugar

Optional

  • Toppings to taste

Preparation

  1. In a medium bowl, measure the flour, baking powder, and baking soda. Mix until combined.

  2. Combine the non-dairy milk and maple syrup or sugar in another bowl.

  3. Add dry ingredients to wet ingredients and slowly combine. Do not over mix or use a hand mixer. Visible lumps of flour are okay.

  4. Pour pancake batter into a medium-size plastic baggie and carefully snip a tiny piece off the bottom corner of the bag.

  5. Heat a non-stick frying pan or griddle on medium-high heat and using a swirling motion with your wrist, dab quarter sizes of batter onto the griddle.

  6. Cook for less than 30-seconds until small bubbles start to form. Flip and after a few seconds, transfer pancake cereal to a plate or dish for serving and top it with your favorite mix-ins.
