Vegan Pancakes with Chocolate and Cherries
Ingredients
- 1 cup flour
- 2 Tbsp coconut sugar
- 1 Tbls baking powder
- 1 cup nut milk
- 1 Tbl Apple cider vinegar
- 1 tsp vanilla
Preparation
Combine the dry ingredients and set aside.
In a separate bowl, combine the wet ingredients.
Add the wet mixture to the dry ingredients and mix well.
Cook the batter on a griddle or pan to make pancakes.
Optionally, top with chocolate-covered pecans and frozen cherries for added flavor.
Topping
Break pecans into pieces and lay them out on parchment paper.
Melt chocolate and pour it over the pecans, then place in the refrigerator to set.
Once set, break into random pieces.
Slice and pit cherries, then freeze them on a cookie sheet for later use.
