Banana Bread Pancakes with Strawberries and Yoghurt
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- banana slices
- strawberry yoghurt
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg and mixing all of the ingredients except for the garnishes.
Heat a non-stick pan and using a spoon pour the batter to form pancakes, and you can add a tiny amount of coconut oil if you want to fry them.
Bake each side for 1 minute until they turn golden-brown.
After making the stack of pancakes, add the banana slices and yoghurt.
