Banana Bread Pancakes with Strawberries and Yoghurt

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • banana slices
  • strawberry yoghurt

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg and mixing all of the ingredients except for the garnishes.

  2. Heat a non-stick pan and using a spoon pour the batter to form pancakes, and you can add a tiny amount of coconut oil if you want to fry them.

  3. Bake each side for 1 minute until they turn golden-brown.

  4. After making the stack of pancakes, add the banana slices and yoghurt.
