Easy Mini Banana Pancakes Plate

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 40 g whole grain flour
  • Pinch of baking powder
  • 1 teaspoon cacao powder
  • Cherries, strawberries & dark chocolate (for garnish)

Preparation

  1. Prepare the pancake batter by blending all the ingredients together, excluding the garnishes and cacao powder. If using a flax egg, mix 2 tbsp of hot water with 1 tbsp of ground flaxseeds and let it thicken.

  2. Heat a non-stick pan and, if desired, add a tiny amount of coconut oil for frying.

  3. Use a teaspoon to pour the batter onto the pan, forming mini pancakes.

  4. Cook each side until they turn golden-brown.

  5. To make chocolate pancakes, add 1 tbsp of cacao powder to half of the batter.

  6. Arrange the pancakes on a plate and pair them with strawberries, cherries, and dark chocolate for serving.
