Easy Mini Banana Pancakes Plate
Ingredients
- 1 ripe banana (mashed)
- 1 egg or 1 flax egg
- 40 g whole grain flour
- Pinch of baking powder
- 1 teaspoon cacao powder
- Cherries, strawberries & dark chocolate (for garnish)
Preparation
Prepare the pancake batter by blending all the ingredients together, excluding the garnishes and cacao powder. If using a flax egg, mix 2 tbsp of hot water with 1 tbsp of ground flaxseeds and let it thicken.
Heat a non-stick pan and, if desired, add a tiny amount of coconut oil for frying.
Use a teaspoon to pour the batter onto the pan, forming mini pancakes.
Cook each side until they turn golden-brown.
To make chocolate pancakes, add 1 tbsp of cacao powder to half of the batter.
Arrange the pancakes on a plate and pair them with strawberries, cherries, and dark chocolate for serving.
