Mini Banana Pancakes Plate

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg/1 flax egg
  • 40 g whole grain flour
  • Pinch of baking powder
  • Dragon fruit powder (optional)
  • Banana slices
  • Cacao nibs
  • Chia seeds

Preparation

  1. Prepare the pancake batter by blending all the ingredients (except garnishes) together. For a flax egg, mix 2 tbsp of hot water with 1 tbsp of ground flaxseeds and let it thicken.

  2. Heat a non-stick pan over medium heat. If desired, add a tiny amount of coconut oil.

  3. Use a teaspoon to pour the batter onto the pan, forming mini pancakes. Cook until golden-brown on each side.

  4. Optionally, make pink pancakes by adding 1 tbsp of dragon fruit powder to half of the batter.

  5. Arrange the pancakes on a plate and garnish with banana slices, cacao nibs, and chia seeds.
