Mini Banana Bread Pancake Skewers

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg/1 flax egg
  • 40 g whole grain flour
  • Pinch of baking powder
  • Dragon fruit powder (optional)
  • Banana slices, cacao nibs, and chia seeds for sprinkling

Preparation

  1. Prepare the pancake batter by blending all ingredients except for the garnishes. If using a flax egg, add 2 tbsp of hot water to 1 tbsp of ground flaxseeds and let it thicken.

  2. Heat a non-stick pan and use a teaspoon to pour the batter, forming mini pancakes. Add a tiny amount of coconut oil if desired. Cook until both sides turn golden-brown. Optionally, use dragon fruit powder to color half of the batter pink.

  3. After making the mini pancakes, cut the banana into slices.

  4. Create the skewers by alternating layers of pancake and banana slices.

  5. Sprinkle cacao nibs and chia seeds over the skewers.
