Mini Banana Bread Pancakes with Peanut Butter, Yoghurt & Banana

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg/1 flax egg
  • 50 g fine oats
  • Pinch of baking powder
  • Blue spirulina powder (optional)
  • Banana slices
  • Peanut butter
  • Cacao nibs
  • Soy yoghurt

Preparation

  1. Prepare the pancake batter by blending all ingredients except for the garnishes. If using a flax egg, add 2 tbsp of hot water to 1 tbsp of ground flaxseeds and let it thicken.

  2. Heat a non-stick pan and use a teaspoon to pour the batter, forming mini pancakes. Add a tiny amount of coconut oil to the pan if desired.

  3. Cook each side of the pancakes until they turn golden-brown.

  4. To make blue pancakes, add 1 tsp of blue spirulina powder to the batter.

  5. After cooking the mini pancakes, arrange banana slices and yoghurt on top.

  6. Drizzle peanut butter over the pancakes and toppings.

  7. Sprinkle cacao nibs on the pancakes.

  8. Enjoy this delightful breakfast treat!
