Cinnamon Vanilla Pancakes with Peanut Butter, Honey, and Banana

Ingredients

  • 3 tbsp almond flour
  • 3 tbsp all-purpose flour (gluten-free 1:1 flour can be used)
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • 1 scoop vanilla collagen (optional)
  • 2 tbsp almond milk
  • 1 egg

Preparation

  1. In a bowl, combine almond flour, all-purpose flour, cinnamon, baking powder, and vanilla collagen (if using).

  2. Add almond milk and crack in the egg. Mix until well combined.

  3. Heat a pan over low-medium heat and lightly spray with avocado oil.

  4. Pour the pancake batter onto the pan to form pancakes (about 5-6 pancakes).

  5. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.

  6. Remove from the pan and stack the pancakes.
