Banana Pancakes with Chocolate & Persimmon Stars
Ingredients
- 1 persimmon
- 1 egg/1 flax egg
- 1 ripe banana, mashed
- 2 tablespoons flour (wholegrain)
- Dark chocolate, melted
Preparation
Mash the banana with a fork and beat the egg. Mix these with all the ingredients except for the garnishes to prepare the pancake batter.
Slice the persimmon and use a cookie cutter to cut out big and small stars.
Heat a non-stick pan and place the persimmon stars in it. Using a spoon, pour the pancake batter on top of each star to form little pancakes. You can add a small amount of coconut oil if desired.
Bake each side of the pancakes for about 1 minute or until they turn golden-brown.
After making a stack of pancakes, drizzle some melted chocolate on top and garnish with more fruit stars.
