Celebratory Apple Pancakes

Ingredients

  • 80g rolled oats
  • 90g flour
  • 2 tbsp chia seeds
  • 1 tsp baking powder
  • Pinch of salt
  • 1 apple
  • 1 banana
  • 300ml liquid (milk or water)
  • 2 tbsp oil
  • Oil for frying
  • Cinnamon
  • Ginger

Preparation

  1. In a mixer, grind the rolled oats to a flour-like consistency.

  2. Add the flour, baking powder, a half of the diced apple, the banana, liquid (milk or water), cinnamon, and optionally 2 tbsp of syrup to the mixer.

  3. Mix the ingredients until smooth.

  4. Incorporate the baking powder and chia seeds into the mixture, and then let it sit for 10 minutes.

  5. Heat a frying pan and add oil for frying.

  6. Pour ladlefuls of the pancake batter onto the hot pan to make pancakes.

  7. Fry the pancakes until golden brown on both sides.

  8. Serve the pancakes topped with the remaining diced apple, nuts, tahini, and syrup.
