Delicious Gingerbread Pancakes Made with Wholemeal Flour

Ingredients

  • 1 cup of flour (I used wholemeal)
  • 1 cup of plant milk
  • 1 tbsp apple cider vinegar
  • 1 tsp baking powder
  • 1 banana
  • 1 tbsp chia seeds
  • 1 tsp ginger
  • Pinch of nutmeg
  • 1/2 tsp cinnamon

Preparation

  1. Put all the ingredients into a blender and blend to a smooth batter.

  2. Let the batter rest for 5 minutes so the seeds thicken the mix slightly.

  3. Heat a little oil in a frying pan and pour in the mix.

  4. Cook on a medium heat for 1 minute until the surface starts to bubble. Flip and cook the other side.

  5. Serve stacked with yoghurt, chia seeds, and coconut flour filling.
