Fluffy Vanilla Blueberry Pancakes

Ingredients

  • 100g spelt flour
  • 20g coconut flour
  • 1 tsp baking powder
  • 2 tbsp coconut sugar
  • 100ml soy milk
  • 100ml sparkling water

Preparation

  1. Combine the spelt flour, coconut flour, baking powder, and coconut sugar in a bowl.

  2. Add the soy milk and sparkling water to make a smooth batter.

  3. Let the batter rest for 10 minutes.

  4. Fry the pancakes on both sides until golden brown.
