Banana Chocolate Chip Pancakes
Ingredients
- 275 ml soy milk
- 1 tbsp apple cider vinegar
- 200 g all purpose flour
- 3 tbsp coconut flour
- 1 tsp baking soda
- 2 tsp baking powder
- a pinch of salt
- 40 g coconut sugar
- 2 tbsp oil
- 1 ripe banana
- 1 tbsp vanilla extract
- 5 tbsp chocolate chips
Preparation
Mix soy milk with apple cider vinegar and let it set for 5 minutes.
In another bowl mix flours, coconut sugar, baking powder, baking soda and salt. Now add milk mix, mashed banana, oil and vanilla extract, just stir until combined, don't overmix. At last fold chocolate chips into the batter.
Heat a pan at medium heat, grease with a little oil if needed. Bake 2 tbsp of the batter per pancake. Once it started to bubble, flip over and bake until golden brown.
Serve warm with maple syrup, more choc chips, banana slices and bluebs.
