Fluffy Vanilla Blueberry Pancakes

Ingredients

  • 100g spelt flour
  • 20g coconut flour
  • 1 tsp baking powder
  • 2 tbsp coconut sugar
  • about 100ml soy milk
  • about 100ml sparkling water

Preparation

  1. Add the soy milk and sparkling water to the dry mixture to form a smooth batter.

  2. Let the batter rest for 10 minutes.

  3. Fry the pancakes on both sides until golden.
