Fluffy Blueberry Poppy Seed Pancakes

Ingredients

  • 100g flour
  • 20g coconut flour
  • 1 tbsp baking powder
  • 2 tbsp coconut blossom sugar
  • 1 tbsp poppy seeds
  • 100ml soy milk
  • 100-150ml sparkling water
  • blueberries

Preparation

  1. Mix 100g flour, 20g coconut flour, 1 tbsp baking powder, 2 tbsp coconut blossom sugar, and 1 tbsp poppy seeds.

  2. Add 100ml soy milk and approximately 100-150ml sparkling water (depending on consistency) and mix.

  3. Leave the dough to rest for 10 minutes, fold in blueberries, and cook on medium heat on both sides until golden brown.
