Banana Bread Pancakes with Chocolate and Peanut Butter

Ingredients

  • 1 ripe banana (mashed)
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Toppings

  • banana slices
  • dark chocolate blocks
  • peanut butter
  • blueberries
  • coconut

Preparation

  1. First you'll have to prepare the pancake batter.

  2. Mash the banana with a fork, beat the egg and mix all of the ingredients except for the garnishes.

  3. Heat a non-stick pan and using a spoon pour the batter to form little pancakes (you can add tiny amount of coconut oil if you want to fry them).

  4. Bake each side for 1 minute until they turn golden-brown.

  5. After making the stack of pancakes, add the banana slices, the blueberries, the chocolate, the coconut shreddings and the peanut butter drizzle.
