Homemade Fluffy Blueberry Pancakes for Vegans

Ingredients

  • 100g flour
  • 20g coconut flour
  • 1 tsp baking powder
  • 2 tbsp coconut blossom sugar
  • 100ml vegan milk
  • approx. 75-100ml sparkling water
  • Blueberries

Preparation

  1. Mix dry ingredients in a bowl.

  2. Add the remaining ingredients and mix into a dough.

  3. Let the dough stand for 10 minutes.

  4. Fold in the blueberries.

  5. Bake in a pan over medium heat for 2-3 minutes until golden brown on each side.
