Fluffy Banana Oatmeal Pancakes

Ingredients

  • 1 cup certified gluten-free rolled oats
  • 1/2 cup almond milk
  • 2 tablespoons maple syrup
  • 1 ripe banana
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Cooking and toppings

  • coconut oil for cooking
  • maple syrup for serving
  • optional toppings such as fresh fruits, nut butter, or jam

Preparation

  1. Place all ingredients in a blender and process until completely smooth.

  2. Brush oil on a large non-stick skillet or griddle over medium heat.

  3. Add batter to the skillet and cook until edges are golden brown, about 2-3 minutes; flip and cook for another 2-3 minutes. Repeat with remaining batter.

  4. Serve the pancakes topped with maple syrup and fresh fruits.
