Fluffy Banana Oatmeal Pancakes
Ingredients
- 1 cup certified gluten-free rolled oats
- 1/2 cup almond milk
- 2 tablespoons maple syrup
- 1 ripe banana
- 1 teaspoon vanilla
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Cooking and toppings
- coconut oil for cooking
- maple syrup for serving
- optional toppings such as fresh fruits, nut butter, or jam
Preparation
Place all ingredients in a blender and process until completely smooth.
Brush oil on a large non-stick skillet or griddle over medium heat.
Add batter to the skillet and cook until edges are golden brown, about 2-3 minutes; flip and cook for another 2-3 minutes. Repeat with remaining batter.
Serve the pancakes topped with maple syrup and fresh fruits.
