Fluffy Banana Pancakes

Ingredients

  • 1 ripe banana, medium size
  • 150ml plant-based milk
  • 50g buckwheat flour (1/4 cup + 1tbsp)
  • 50g gluten-free oat flour (1/4 cup + 1tbsp)
  • 1/2tsp baking powder
  • 1/2tsp baking soda
  • 1tsp apple cider vinegar
  • 2tsp maple syrup
  • 1tbsp olive oil
  • 1/4tsp salt
  • 2tsp cinnamon
  • 1tsp cardamom

Preparation

  1. Mash banana with a fork in a baking bowl.

  2. Add milk, apple cider vinegar, oil and maple syrup and whisk together.

  3. Sift in dry ingredients. Mix until you have a smooth batter.

  4. Cook pancakes on a non-stick frying pan over medium heat until golden on both sides. Serve immediately with your favourite toppings.

Topping suggestions

  1. Favorite toppings include coconut yoghurt and fresh fruit, or maple syrup and vegan bacon.
