Cinnamon Buckwheat Pancakes with Berries, Figs and Nectarine

Ingredients

  • 60g buckwheat flakes
  • 10g banana flour (or almond flour or more buckwheat flakes)
  • 10g vanilla protein powder
  • 100ml plant based milk or water
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • a pinch of salt
  • cinnamon
  • sweetener of your choice
  • a splash of sparkling water

Preparation

  1. Add the buckwheat flakes to a blender and blend them into flour.

  2. Add all the ingredients to a bowl, stir well, and let the mixture sit for 10-15 minutes.

  3. Preheat a pan and cook the pancakes on both sides.

  4. Add toppings of your choice.
