Vegan High-Protein Red Lentil Waffles
Ingredients
- 1/2 cup red lentils
- 1 cup soy milk
- 1 medjool date
- 1/2 teaspoon cinnamon
- 1/8 teaspoon baking powder
- Pinch of salt
Preparation
Soak the lentils in soy milk along with the date for at least 3 hours or overnight.
Add the remaining ingredients and blend until smooth.
Grease the waffle maker with 1 teaspoon of olive oil and cook the batter to make two waffles. Add your favorite toppings and enjoy.
