Vegan High-Protein Red Lentil Waffles

Ingredients

  • 1/2 cup red lentils
  • 1 cup soy milk
  • 1 medjool date
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon baking powder
  • Pinch of salt

Preparation

  1. Soak the lentils in soy milk along with the date for at least 3 hours or overnight.

  2. Add the remaining ingredients and blend until smooth.

  3. Grease the waffle maker with 1 teaspoon of olive oil and cook the batter to make two waffles. Add your favorite toppings and enjoy.
