Vegan Blueberry Vanilla Muffins

Ingredients

  • 1 cup plain flour (or flour of choice)
  • 1/2 cup granulated natural sweetener (raw sugar, coconut sugar, xylitol)
  • 1 tsp baking powder
  • 1/4 tsp baking soda (bicarbonate)
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 75g blueberries
  • 3/4 cup soy milk (or milk of choice)
  • 1/2 tsp apple cider vinegar

Preparation

  1. Preheat oven to 180C

  2. Mix milk and vinegar and allow to stand for 5 minutes to turn into buttermilk

  3. Mix dry ingredients, mix wet ingredients

  4. Add wet to dry and stir until just mixed

  5. Add blueberries and stir through

  6. Spoon into 6 muffin cases (I used silicon)

  7. Bake for 20-25 minutes until lightly golden and a skewer comes out clean

Notes

  1. This recipe makes 6 muffins

  2. Perfect for breakfast or as a snack
