Vegan Blueberry Vanilla Muffins
Ingredients
- 1 cup plain flour (or flour of choice)
- 1/2 cup granulated natural sweetener (raw sugar, coconut sugar, xylitol)
- 1 tsp baking powder
- 1/4 tsp baking soda (bicarbonate)
- 1/4 tsp salt
- 1 tsp vanilla extract
- 75g blueberries
- 3/4 cup soy milk (or milk of choice)
- 1/2 tsp apple cider vinegar
Preparation
Preheat oven to 180C
Mix milk and vinegar and allow to stand for 5 minutes to turn into buttermilk
Mix dry ingredients, mix wet ingredients
Add wet to dry and stir until just mixed
Add blueberries and stir through
Spoon into 6 muffin cases (I used silicon)
Bake for 20-25 minutes until lightly golden and a skewer comes out clean

This recipe makes 6 muffins
Perfect for breakfast or as a snack
