Blueberry Lemon Banana Muffins

Ingredients

Wet

  • 2 large or 3 small bananas
  • 2 flax eggs
  • 1 tsp vanilla extract
  • 1 lemon juiced + 1 tsp rind

Dry

  • 1/3 c gluten free flour
  • 1/3 c vanilla protein
  • 1 tsp baking powder
  • dash salt
  • 1 tsp cinnamon (optional)
  • 1 pint blueberries (about a cup)

Preparation

  1. Mash bananas in a bowl and add other wet ingredients, then stir well.

  2. Add dry ingredients, adding blueberries last, and stir to combine.

  3. Using a big spoon or ice cream scoop, add batter to lined or greased muffin tin.

  4. Bake at 350°F for 15-20 minutes; it may take 20 minutes.

  5. Store the muffins in the fridge.

Notes

  1. Lemons enhance flavors and may help fight cancers; they protect against inflammatory arthritis and stimulate digestion when consumed with warm water in the morning.

  2. Top the muffins with pecan butter for an enhanced flavor.
