Blueberry Lemon Banana Muffins
Ingredients
Wet
- 2 large or 3 small bananas
- 2 flax eggs
- 1 tsp vanilla extract
- 1 lemon juiced + 1 tsp rind
Dry
- 1/3 c gluten free flour
- 1/3 c vanilla protein
- 1 tsp baking powder
- dash salt
- 1 tsp cinnamon (optional)
- 1 pint blueberries (about a cup)
Preparation
Mash bananas in a bowl and add other wet ingredients, then stir well.
Add dry ingredients, adding blueberries last, and stir to combine.
Using a big spoon or ice cream scoop, add batter to lined or greased muffin tin.
Bake at 350°F for 15-20 minutes; it may take 20 minutes.
Store the muffins in the fridge.
Notes

Top the muffins with pecan butter for an enhanced flavor.
