Banana Chocolate Chip Muffins

Ingredients

  • 1/3 cup extra virgin olive oil
  • 3/4 cup maple syrup
  • 2 large eggs
  • 1 cup ripe mashed bananas (about 3 large bananas)
  • 1/4 cup almond milk
  • 1 tsp vanilla
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 2 cups self raising flour
  • 1/2 cup chocolate chips
  • (optional) 1/3 cup chopped walnuts

Preparation

  1. Preheat oven to 175C and line a muffin tray with muffin cases

  2. In a bowl whisk together the olive oil, maple syrup, eggs, bananas, milk and vanilla

  3. Take another large bowl, put a fine sieve on top and sieve in the flour, baking powder, cinnamon and salt.

  4. Pour the wet mix into the dry mix and mix till just combined.

  5. Fold through the chocolate chips and if using the walnuts.

  6. Spoon the mix into the muffin cases.

  7. Bake for about 25 mins till a knife comes out clean.
