Mini pear and seed muffins

Ingredients

  • 1/3 cup extra virgin olive oil⁣
  • 1/2 cup maple syrup⁣
  • 2 large eggs⁣
  • 1 cup ripe grated pears (about 4 pears) i grate the pears with the skin on. as you grate them, they will release a lot of liquid. you want the pulp part, not the liquid. ⁣
  • 1/4 cup oat milk⁣
  • 1 tsp vanilla⁣
  • 1 tsp baking powder⁣
  • 1/2 tsp salt⁣
  • 1 tsp cinnamon⁣
  • 2 cups self raising flour⁣
  • 3/4 cup mixed seeds (not sesame) i used sunflower, chia, pumpkin and flaxseeds. ⁣

Preparation

  1. Preheat oven to 175c and line a muffin tray with mini muffin cases⁣ or grease a little

  2. In a bowl whisk together the olive oil, honey, eggs, pears, oat milk and vanilla⁣

  3. Set aside

  4. Take another large bowl, put a fine sieve on top and sieve in the flour, baking powder, cinnamon and salt

  5. Pour the wet mix into the dry mix and using a spatula, stir till just combined

  6. Do not overmix

  7. Fold in the seeds

  8. Spoon the mix into the prepared muffin trays

  9. I use a tablespoon per muffin

  10. Bake for about 18 mins till a knife comes out clean

  11. Enjoy
