Banana Chocolate Muffins
Ingredients
- 1/3 cup extra virgin olive oil
- 3/4 cup maple syrup
- 2 large eggs
- 1 cup ripe mashed bananas (about 3 large bananas)
- 1/4 cup almond milk
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 2 cups self raising flour
- 1/2 cup chocolate chips
- 1/2 cup chopped walnuts (optional)
Preparation
Preheat oven to 175c and line a muffin tray with 10 muffin cases
In a bowl whisk together the olive oil, maple syrup, eggs, bananas, milk and vanilla
Set aside
Take another large bowl, put a fine sieve on top and sieve in the flour, baking powder, cinnamon and salt
Pour the wet mix into the dry mix and using a spatula, stir till just combined
Do not overmix
Fold in the chocolate chips
If using, also add the walnuts
Or do half and half
Spoon the mix into the 10 muffin cases
I use a heaped 1/3 cup measure
Bake for about 25 - 30 mins till a knife comes out clean
