Healthier Hot Cross Muffins

Ingredients

  • 2 Tbsp water
  • 1 cup raisins
  • 1/2 cup dried fruit mix
  • 2 1/2 cups stoneground wheat flour
  • 1 Tbsp baking powder
  • 2/3 cup coconut sugar
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1 1/2 cups almond milk
  • 2 large eggs
  • 1/2 cup unsalted butter, melted

Crosses

  • 1/4 cup flour
  • 3-4 Tbsp almond milk
  • 2 tsp maple syrup

Preparation

  1. Preheat the oven to 180C and prepare a 12-cup muffin pan

  2. Place the raisins and dried fruit in a small saucepan over low heat for a couple of minutes and set aside to soak and cool

  3. In a large bowl, whisk together the flour, baking powder, sugar, salt, and spices

  4. Make a well in the centre and add the soaked fruit

  5. In a separate bowl, beat together the milk and eggs and stir in the melted butter

  6. Add to the dry ingredients and stir until evenly combined

  7. Scoop the batter into the muffin cups, 3/4 full

  8. In a small bowl mix together the ingredients for the crosses, place in a Ziploc bag, cut a small hole in the corner, and make the cross on each muffin

  9. Bake for 20 to 25 minutes, until a toothpick inserted comes out clean, then remove from the oven and cool on a rack

Tips

  1. To avoid a tough and chewy muffin, ensure that you don’t over-mix your muffin batter by mixing wet and dry ingredients separately before combining minimally, and remember that lumps in the batter are fine and key to perfect muffins
