Homemade Spinach Pesto Baked Poppers

Ingredients

  • 3 eggs
  • 1/4 cup coconut flour
  • 1 tsp baking powder
  • pinch of salt
  • spinach
  • pesto

Preparation

  1. Mix eggs, flour, baking powder and salt until fully combined then fold in spinach.

  2. Use a cookie scooper to transfer the mixture into the mini muffin pan, make sure to line with cupcake liners or parchment paper.

  3. Place a dollop of pesto on top of each mini muffin and swirl with a toothpick or whatever you have on hand.

  4. Bake at 350F for about 15 minutes.

  5. Enjoy!
