Homemade Spinach Pesto Baked Poppers
Ingredients
- 3 eggs
- 1/4 cup coconut flour
- 1 tsp baking powder
- pinch of salt
- spinach
- pesto
Preparation
Mix eggs, flour, baking powder and salt until fully combined then fold in spinach.
Use a cookie scooper to transfer the mixture into the mini muffin pan, make sure to line with cupcake liners or parchment paper.
Place a dollop of pesto on top of each mini muffin and swirl with a toothpick or whatever you have on hand.
Bake at 350F for about 15 minutes.
