Keto Paleo Celery Pulp Matcha Muffins
Ingredients
- 1 over ripe banana
- 1/2 cup unsweetened applesauce
- 3 eggs
- 1/2 cup swerve sweetener
- 1 1/2 cups celery pulp
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1-2 tablespoons matcha
- 3 cups almond flour
- 1/4 cup pepitas
- hemp seeds
Preparation
Roughly chop or pulse celery pulp in food processor to break up strings.
Add 1 over ripe banana, 1/2 cup unsweetened apple sauce, 3 eggs, 1/2 cup swerve sweetener, and 1 1/2 cups celery pulp to a bowl. Beat with hand mixer until combined.
Add 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 1-2 tablespoons matcha, and 3 cups almond flour. Mix until combined.
Stir in 1/4 cup pepitas and hemp seeds.
Bake in a lightly greased muffin tin topped with extra pepitas at 350 degrees for 25 minutes.
